Enhancing the Value Chain for Eggshell Derivatives

In developed countries such as Canada, about 30% of shell eggs are diverted to breaker processing plants for industrial production of egg white and yolk for the food processing and biopharmaceutical industries. Large quantities of waste eggshell (ES) / eggshell membrane (ESM) are generated for which the egg producing industry seeks high-value applications. Hincke will provide an overview of his research program with overarching goal to identify innovative upscale applications for ES and ESM derivatives. These extend from bone regeneration (ES for tissue engineering) to gut health, wound healing and skin health applications of ESM. (Supported by LRIC, EFC, NSERC).
